Quorn Sausage, Roast Pepper & Rocket Salad

To celebrate World Meat Free Day (on June 15th) here is a a meat-free themed recipe to inspire your evening meal (or lunch for that matter!).

 

This dish is one that I created when I was down in London with Quorn (check out my Meat-Free Curry Video Recipe for more inspiration!) and it honestly is so easy to prepare .. it’s perfect for a Monday night after a long day at work!

 

Eating a more plant-based/meat-free diet is not only good for the environment but it’s great for your health (and wallet too!). Plant-based diets are often lower in calories and higher in fibre in comparison to diets that are based around meat, and are often more filling too. I would recommend everyone has a go at having at least one meat-free day a week, so I’m all for a World Meat Free Day!

 

[ingredients]

 

All pasta has a relatively low glyceamic index meaning that it releases its energy slowly, keeping us fuller for longer! The olive oil and pesto contain heart healthy fats, the vegetables and salad add fibre, vitamins and minerals and the Quorn provides protein, leaving us feeling fuller for longer (check out my blog post on World Meat Free Day for more information!).. this meal is perfect for lunch or dinner and should keep you fuelled for hours afterwards!
